Quinoa salad with roast broccoli and green goddess dressing

Have you heard of the Green Goddess? She’s a magical woman carrying undeniable pizzazz and vibrant oomph in every step she takes. Okay, okay, enough silliness. It’s actually a deliciously herb-packed sauce with one very important job: to make your dinner sing. And oh, does it deliver. This salad brings along all the usual suspects we love to see too. Hearty chickpeas, roasted spiced broccoli florets, green peas, red and white quinoa, and a tumble of fetta over the top to finish. Heat it up if you’d like or enjoy it straight from the fridge once defrosted. Calling it easy would be an understatement. Calling it just delicious wouldn’t quite do it justice either.
